My Family Recipes (1) - Seasoned Steamed Yam & Pork 扣肉

Preparation for pork
1) Buy 1.5 KG of 3 layers pork (3层肉)
2) Cut the pork in square shape
3) Put the pork into boiling water and cook for 5 minutes4) Take them up and cold down
5) Use a fork to poke some holes on the skin. Later when fry the pork, it allows the fat/oil to come out.6) Fry the pork till skin turns golden (look likes roasted pork)
7) Put the pork into cold water for 2-3 hours until the skin is soft.
8)Cut the pork into slices Preparation for yam
1) Get some yams, remove the sky and cut it to slices.
2) Fry the yam till it turn golden
Preparation for garilc and onions
1) Prepare 15 garlic and 15 onions2) Chop them into small pieces
Preparation for seasonings
4 soup spoons of Chinese cooking wine3 tea spoons of bean paste
4-5 pieces of 南乳
1 soup spoon of light soya sauce
2 soup spoon of dark soya sauce
Adequate sugar
Adequate salt
½ tea spoon (or adequate) of 5 spices powder
1 tea spoon (or adequate) of oyster sauce
½ team spoon (or adequate) of pepper powder
1 tea spoon (or adequate) of sesame oil
2/3 big bowl of water

Mix all above together

Preparation to steam the Yam & pork
1) Put the yam and pork (skin on to the bottom of the bowl) into a bowl.
2)Put them in nice order: one slice of pork follow with one slice of yam

2) Put garlic & onion on the park and yam
3) Add the seasoned into the yam and pork3) Steam the pork for 4 hours until the pork is completely soft and
you can feel it is melt in your mouth
