My Family Recipes (5) - Stew Duck (Dark Soya Sauce Duck)

Preparation for Ingredients
1 fresh duck (2 to 2.5 KG)
6 Star anises
2 Cinnamon sticks
2 1st fingers size of Lang Ginger
5-8 pieces of garlic
5 small red onions
8-10 eggs (boil the eggs till completely cooked. Remove the shells)


Preparation for seasonings
1 tea spoon (or adequate) of 5 spices powder
8-10 soup spoons of dark Soya Sauce
8-10 soup spoons of light Soya SauceAdequate of sugarAdequate of salt
4 soup spoon of Chinese cooking wine


Method

Boil a 1/3 pot of water.Put in all the ingredients and the seasonings except for the duck. When the water is boiling, put in the duck.Need to push or move the duck once in every 2-3 minutes. Also need to “watering” the duck on the part where doesn’t cover by the water/sauce.Turn the duck once in every 20 minutes until the duck is cooked. It takes about 1 hour or 1 hour and 20 minutes.
Preparation for the eggs
Put the eggs into the sauce and cook for 1-2 hours. Use min fire.
